Crossing all the rankings of the italians wine guides, ES is the best italian red wine! This wine was chosen for exclusives cerimonies by Kings, Queens, Presidents and Celebrities. From north Salento another excellent 100% Primitivo.

ES, according to Sigmund Freud: Instinct and unbridled passion (the same that was produced this wine) without conditions, withot rules, beyond space and time, logic and morality. Do not know the good, nor evil. The ES is subject to a single principle: "PLEASURE".

Gianfranco Fino winery was born in 2004 and produces only 2 kind of wine, this because the focus was to obtain extreme quality of wine: No compromises, short trimming, important thinning out of grapes, obsessive attention in the vineyard. A deep passion dedicated to the care of each single detail, backed by obstinacy.  

In the vineyard use of prevention grape disease methods along cultivation instead of chemicals, cut of the infesting herbs, no fertilization. The harvest light drying of grapes still om the plant, manual harvesting with careful selection of grapes, transport by vacuum box truck.  

In the cellar selection tables, destemming, soft grape crushing, contact skins-most for 3-4 weeks, temperature control at the top of pomace (max 23-25° C). Wine is put for 24 hours in stainless steel to remove dregs, then in french oak barriques. Daily batonnage since the first decanting.  

After about 10 months of aging in wood without clarification and without tartaricdeposit, the wine is bottled and maintained for further six months of aging in glass before consumption.

ES was also selected for the G8 Heads of State and was the wine chosen for private banquet of Queen Margrethe II of Denmark at her 70th birthday. And day by day many celebrities all around the world tasting and appreciate this Salento wine. About 15.000 bottles produced each year.
