Fantastic wine! Limited and Numbered production only in the best vintages. From south SALENTO Primitivo at maximum power. It's name DICIOTTO means "eighteen" and 18 is the alcohol content of this outstanding wine.
The latin motto of the winery is: ERUDITIO ET DISCIPLINA (Learning and Discipline), in fact SCHOLA SARMENTI was born with a specific purpose: preserving and enhancing cultural and technical wine heritage coming from the ancient generations of Salentine peninsula.
SCHOLA SARMENTI is authentic vineyards, skillfully and patiently protected for over 80 years, harvesting only the best grapes, which were ripened respecting and rediscovering centuries of wisdom. Sages of all times confirmed that mankind and wine met in the mists of night and their meeting was not accidental. SCHOLA SARMENTI is a modus vivendi and a philosophy of life which make wine tasting a unique moment.
DICIOTTO is Primitivo an autochthonous vines at just few step from the Jonion Sea, with some magnificent stone walls, typical and ancient fences of this area. The prosperity, the health and beauty of the vineyards, that SCHOLA SARMENTI have decided to entrust only to experienced and wise peasants, never tired of using ancient techniques of culture - how to maintain, the typical Salento tree, the “Alberello Pugliese”, of plants "old", but never hoary, even to one hundred years old. SCHOLA SARMENTI has always claimed to cultivate only and only native vines, such as Primitivo, present in our lands over 500 years and Primitivo, which dates back at least 2000 years ago, resulting in wines that, in all, know how to tell the flavors and the smells of our land.
Since long time PRIMITIVO is confused with ZINFANDEL, both are two different clones of the same grape, but the soil, climate and cultivar make the difference.

TECHNIQUE USED FOR THE CULTIVATION OF THE VINEYARD: Alberello Pugliese.
HARVESTING: Picked up by hand in small airy and bottom-closed crates .

PRODUCTION PER HECTARE: Kg. 2.000/3.000 ab.
MICROCLIMATE: Typical Mediterranean, i.e. warm and dry.
EXPOSURE OF THE VINEYARDS: Southern direction, in a temperate area influenced by the surrounding sea.
AGING: 14 months in french oak tonneau, than at laest 12 months of furhter fining into the bottle.
