Rare, Incredible, Ancient, The One! Spectacular the harvest by "spider men" of vineyards 20 metres high make this white wine ASPRINIO of AVERSA unique in all of the world! The name means "sour" but it's perfect with Pizza.
The Asprinio Aversa is one of the oldest wine of Campania. It was probably the French Louis XII to import the vine, which belongs to the family of Pinot and is a native of Champagne, when in 1500 conquered the Kingdom of Naples hoping to continue to drink in south of Italy, a sparkling wine as Champagne. The Vine, in association with cannabis, allowing to produce a wine with a low alcohol content, very nice but quite edgy, with a slightly sour flavor that gave its name to the wine and the grape itself.
The difficulty to store up the Asprinio made this a "summer" wine, to be sold in bulk and be drunk in the middle of summer, brought up from the deep caves of tufa deep beyond 20 meters.
Important witness of the Sante Lancerio (papal butler) who, in "The travels of Pope Paul III (1549)" said His Holiness the Pope drunk this wine in order to defend himself of the heat of summer. But its high acidity, made Asprinio suitable for sparkling wine, so in the past grapes asprinio was bought by the French to transform it into sparkling wine.
About 30 years ago was used to make vinegar and, especially a distillate: Brandy. The French when in the second half of the nineteenth century the mildew destroyed the vineyards in Charente, used Asprinio also to produce the Cognac.
Later in the sixties/seventies a more rational cultivation and adopted modern techniques of winemaking has been recovered this variety and in 1983 was presented with the first Asprinio which was a great success. Ten years later the Asprinio got the DOC.

This EXTREME wine SANTA PATENA is the TOP wine produced by I BORBONI the winery founded from the beginning of the last century. The traditional way in working asprinio wine was recovered and it was again taken in caves 13 mt deep, these caves fitted for the preservation of asprinio wine because of their even temperature, coolness and dampness in every period of the year. The production is modest but the producer granted us a reseved quantity for our clients.

HARVEST: Last decade of September, first decade of October, hand harvest
VINIFICATION: Controlled temperature fermentation for 15 days.
AGING: Aging starts after alchoolic fermentation, with a stop of 12 month on fine lees, and batonnage, pulling up the good lees, with the pourpose of best structuring the final product. The Santa Patena goes remains in glass bottle at least 3 months.
